Tarragon salad dressing

Hi everyone!

The salad dressing I’m sharing the recipe of today is one to go with tomatoes.

I have tweaked the recipe I’ve had for over twenty years (originally made with half tomato ketchup, half mayonnaise, a bit of diced onion and the rest of the ingredients of this recipe) to make it a bit healthier and it turned out ok. And I’m not only using it on tomatoes but in salads and on other cold vegetables to.

Tarragon salad dressing

Ingredients

  • 50 g tomato puree
  • 100 g mayonnaise
  • 100 g Greek yoghurt
  • 2 tsp lemon juice
  • 5 tbsp hot water
  • 2 tbsp dried tarragon

Method

  • Put all the ingredients in a jar, put the lid on and shake until everything is well-mixed.
  • Keep in the fridge for up to 2 weeks.
