Bell pepper couscous

Hello Everyone!

Don’t you love meals that can be cooked quickly when you come back from work? I do.

This is one of my favourite quick meals. You can have it on its owns as a vegetarian dish or you can add some fish or meat.

I like making a double portion and take the second one to work in my lunchbox the next day.

Bell pepper couscous

Ingredients for the couscous (serves 1)

  • 1/4 cup couscous
  • ½ tsp Italian seasoning
  • ½ tsp smoked paprika
  • Pinch of salt
  • Freshly ground pepper
  • 1/4 cup freshly boiled water
  • 1 tsp olive oil

Ingredients for the bell pepper mix (serves 1)

  • 2 pointy red peppers (or any pepper of your choice) (diced)
  • 1 medium white onion (peeled and diced)
  • 1 clove garlic (minced)
  • Pinch of salt
  • Freshly ground pepper
  • 2 tsp olive oil


Method fort he couscous

  • Mix the couscous with the Italian seasoning, smoked paprika, salt and pepper in a bowl.
  • Pour in the hot water, stir, cover the bowl and leave for 5 minutes.
  • Before serving, stir well and add the olive oil.

Method for the bell pepper mix

  • Heat the olive oil in a pan and add the onion.
  • Sauté for 5 minutes, add the garlic and sauté for another minute.
  • Stir in the peppers, add pepper and salt to taste and sauté for 5 minutes.
  • Mix in the couscous and serve.




  • I made this with quick couscous. There is also couscous that needs cooking longer. Look carefully at the package when buying some.
  • You can serve this with fish, shrimp, baked minced meat or a burger. Or without either if you are vegetarian or don’t feel like eating fish or meat.
  • Can be eaten hot or cold.
